Turkish food is always on my hit list. Let it be desserts, snacks or mains..they always have a special place in my heart. We visited Turkey almost two years back and we are in love with that city! The food, the culture, the people..and CATS..ahh! only if I could go back!
Coming back to the food, we didn’t really research on food varieties when we went there and were trying anything and everything we got to eat locally and were completely avoiding any western food. So naturally, when we heard pizza, we said NO WAY! But recently we went to a Turkish restaurant and one of my friends ordered ‘Pide’ not really knowing what to expect, we were surprised to see the dish and I was so disappointed that we didn’t bother to try it from Turkey.


About this Pide Recipe
Turkish pide a delicious flatbread shaped like a boat and filled with grounded meat masala. When you fold the Dough into a boat shape, make sure to twist the ends and fold the sides as a border so it can hold the fillings inside.
Feel free to play with the toppings. Add some grated mozzarella cheese if you want it cheesy. Or use beef instead of chicken or go for full veggie Or add some tomatoes and an egg as topping. It is completely up to you. In this recipe, I used minced chicken here to make the filling.

To make the Turkish Pide, take yeast, milk,egg and oil in a mixing bowl.
Combine this well using a hand whisk.
Add plain flour and salt to this, mix well.
Add water and knead well using hands.
Cover it with a cling film and let it rise for 1 hour.
After one hour , take out the dough and knead it into a ball. The dough will be sticky.
Cut the dough into equal sizes and roll each of them into oval shape.
Heat oil in a pan.
Add onion and sauté until the raw smell is gone.
Add ginger & garlic, tomatoes and green chillies and cook until the tomatoes are soft.
Add all the rest of the dry ingredients and sauté well until everything is combined together.
Add chopped coriander and turn off the heat.
Transfer the oval shaped pide dough into greased baking tray.
Spoon in the chicken filling on the dough leaving the sides of it to fold into a boat shape.
While folding, twist the ends of pide together to hold the boat shape.
Finally, egg wash each pide ( Brush each of them with egg yolks)
Bake it at 160C for 15 min or until the crust turns golden.
