No bake Cheesecake cake

A beautiful No Bake Jello-Cheesecake recipe which is luscious to both eyes and tongue . The jelly appearance really adds a colourful twist to this cheesecake and it's almost transparent nature gives you a chance to show off artistry in cooking ! It’s less hustle than the baked one! So let’s get started!

Yields8 Servings

Ingredients
For the crust
 1 cup Digestive Biscuits or any other sweet biscuits
 100 g Butter
For the filling
 200 g Soft cheese/ Cream cheese
 280 ml Double cream
 ¼ cup Sugar, powdered
 ½ cup Strawberry
 ½ cup Milk
 3 tbsp Agar agar powder
For Jelly topping
 100 g Strawberry Jelly

For the crust

Put the biscuits in a ziplock bag and crush it into fine crumbs using a rolling pin.

Add Butter and mix until well combined

Pour this mixture into the cake tin and press it down firmly using a flat spatula or a spoon.

Set this aside.

For Cheese Filling

Pour the cream cheese into a bowl and using a spatula, soften it by folding in the cream continuously

Add sugar into the cream cheese, and mix well

Whip the double cream in another bowl until a soft peak is formed.

Mix the double cream and whipped cream together until both are well combined

Take strawberries in a bowl and mash it well using a masher. Alternatively blend it in a blender. There should be no large lumps in it.

Add the strawberry purée to the cream cheese mixture and stir well

Stir the milk and agar agar powder in a pan first before boiling. Then boil the milk until the agar agar powder is dissolved completely in it. Make sure there’s no lumps left behind. The mixture will be thick when done.

Add the agar agar mixture to the cream mixture and mix well.

Pour this on top of the biscuit crust and spread it evenly . Give a tap to the cake tin to make sure there’s no air bubbles in it.

Refrigerate this at-least 4 hours so it won’t melt when the jelly is poured .

Cut strawberries into any shapes and arrange it on top of the cheesecake.

Prepare the jelly according to the instructions in the package

Gently pour the jelly onto the cheesecake using a deep ladle.

Refrigerate it for 4-8 hours or overnight . Do not take soon after the jelly is set, because there’s a chance of cheese filling to melt .
