Carrot Soup Recipe; Finally, soup season is here. So I thought why not make a carrot soup. Initially, I wasn’t a fan of thick creamy soup at all. I alway liked the watery, spicy traditional soups with so many herbs in it. But one day I happened to taste this creamy soup from my work place and O.M.G ! it was a game changer!

This recipe is for everyone. You don’t have to be a pro-cook or need a lot of ingredients to make. This recipe only needs a few ingredients and 30 minutes of your time. Doesn’t it sound so perfect already for a lazy Sunday brunch?

About the Creamy Carrot Soup Recipe;

Coconut milk/Cream; Coconut milk gives this recipe a slight sweetness and thickness. I have added the same amount of water and coconut milk in this recipe. If you prefer your soup to be less thicker, water it down until you get the preferred consistency .

Seasoning: My favourite combination of seasoning for this soup is salt, pepper and a little bit of chilli flakes in it.

To Serve; Toasted bread sticks/ cubes are the perfect match for this recipe. To prepare this, Heat 2 tsp oil in a pan and toast all sides of sliced bread in it until it turns brown.

To Garnish; Use cilantro / coriander and crushed peanuts.

INGREDIENTS
 2 tbsp Vegetable Oil
 3 Carrots, medium
 1 Onion, Medium
 2 Cloves
 2 inches Garlic
 2 cubes Chicken/Vegetable stock
 1 cup Water
 1 cup Coconut milk
Seasoning
 Pepper
 Salt

Heat oil in a pan. Sauté finely chopped ginger, onion and crushed cloves until it turns light brown. To this, add chopped carrot and combine everything together.

Crush the stock cubes with hand and add it to the pan. Add water and cook until the carrot is done.

Remove it from the heat and after cooling down, blend it until smooth.

Transfer it to the pan and add coconut milk and seasonings and cook it on low-medium heat until everything is well combined. Garnish it with cilantro and peanuts. Serve the carrot soup hot with bread sticks.
