About the Classic Eggnog Recipe

It tastes almost like a custard drink and because of that reason, I like to serve it with some whipped cream on top. There was so many recipes using raw eggs to prepare eggnog, but the thought of having a raw egg made me go nuts.!

Finally, I was lucky enough to find a recipe that is non-alcoholic and does not use any raw eggs to make it. All thanks to Tastes Better From Scratch

 6 Egg yolks
 ½ cup Sugar,Granulated
 1 cup Double cream/ Heavy cream
 2 cups Milk
 ½ tsp Nutmeg
 A pinch of salt
 1 tsp Vanilla essence
To garnish
 Ground Cinnamon

To make the Classic Eggnog, Hand whisk the egg yolks and sugar in a bowl.

Heat a saucepan and pour in the milk, cream, nutmeg, and salt. Make sure to stir constantly and switch off the flame when it starts boiling.

To temper the eggs, take a spoon full of hot milk and add it to the egg mixture and combine it well using a whisk. Repeat it until you mix half of the milk with eggs.

Now add the rest of the milk and egg mixture together in a saucepan and heat it until it thickens. Make sure to stir constantly. Switch off the stove and add vanilla essence and mix well. It will thicken more when it's cool down.

Transfer it into a container and refrigerate it to chill. If the eggnog is too thick, blend the mixture by adding 1 or 2 tbsp of milk. Top the eggnog with ground cinnamon.
