Almond Phirni | Badam Phirni

Almond Phirni | Badam Phirni; This creamy, luscious, traditional Indian dessert is full of almond goodness. It tastes divine when its served chilled and garnished it with crushed almonds. Making Almond phirni / Badam phirni is very simple. All you have to do is blend the soaked Basmati rice and almonds in a blender separately to make a thick paste and add both into the boiling milk along with condensed milk, sugar, cardamom and saffron.

INGREDIENTS
 ½ cup Almond
 ¼ cup Basmati rice
 4 cups Milk
 4 tbsp Condensed milk
 2 tbsp Sugar
 ½ tsp Cardamom powder (optional)
 Few strands of saffron (optional)
 2 tbsp chopped almonds (to garnish)

Method

Soak the almonds and basmati rice in water for four hours.

Peel off the skin from almonds and transfer it into a blender. Add 1/4 cup of milk and blend to make a thick paste. Set it aside.

Now transfer the Basmati rice into the blender and add 1/4 cup of milk and blend to make a thick paste. Set this aside.

Heat a saucepan on a medium flame and boil the rest of the milk. Add condensed milk and sugar, and stir well. Adjust the sweetness according to your taste. Make sure to continuously stir the milk.

When the milk thickens slightly, add the almond paste and rice paste. Make sure to continuously stir while doing this.

Finally, add cardamom powder, saffron and cook until it thickens.

Garnish with chopped almonds and serve.
